- 1/2 Cup Uncooked Jasmine Rice
- 1 1/4 Cup Water
- 1/3 Cup Cilantro Packed
- 1 Tsp Lime Juice
- 1 Tbsp Olive Oil
- 1/2 Chicken Breast (Cut in cubes)
- 1 Tsp Umami Seasoning
- 1 Tsp Chili Powder
- 1 Tsp Garlic Powder
- Dash of Cayenne Powder
- 1/4 Cup Sliced Cucumber (Sliced into Quarters)
- **OPTIONAL** Diced Green Onions to top chicken
- **OPTIONAL** Creamy Jalapeño Sauce to drizzle (Recipe linked [here])

1. Pour the uncooked rice and water in a pot. Bring the water to a boil and keep on the stove for ~7 minutes. Drain the excess water & starch and let the cooked rice sit in pot.
2. Chop the cilantro and add to the rice along with the lime juice. Mix thoroughly.
3. In a pan, warm the olive oil. Once the oil is slightly bubbling, add in your chicken breast. Turn the stove to medium heat.
4. Add in your chicken seasonings (umami, chili, garlic, cayenne powder).
5. Sauté the chicken breast until cooked.
6. Place the rice onto your plate, along with a side of sliced cucumber, and your hot chicken. Add diced green onions to top the chicken and creamy jalapeño drizzle to add some color and flavor! Enjoy :’)
